Damn Good Strawberry Pie

That’s some damn good pie.

I thought it’d be funny to have a recipe where you don’t actually get a recipe. It’s just this overly long narrative like some food blogs. Don’t worry, that’s not the case here. I’ll just say this is a no-bake pie my mom used to make. Perfect for the summer.

First off, make a graham cracker crust or a pretzel crust.

  • 1 1/2 cups graham cracker crumbs (or 10 graham cracker sheets pulverized to crumbs in a food processor) 170g
  • 2 Tablespoons sugar
  • 1 Tablespoons brown sugar packed
  • 7 Tablespoons butter melted (100g)

Bake it at 350ºF for 10 minutes and let it cool.

Your next ingredients are:

  • 1 quarter of strawberries (hulled)
  • 1 cup of water
  • 1 cup of sugar
  • 3 tbsp. cornstarch
  • 3-8 ounces of cream cheese, softened.

Wash, hull, and slice the strawberries, then simmer 1 cup of strawberries in 2/3 cup of water for 3 minutes or so. Meanwhile, blend the sugar (you can use less), cornstarch, and remaining 1/3 of water in a measuring cup. Add that sugary mix to the boiling strawberries, stir it and bring it back to a boil for like a minute. Then set it aside to cool.

Take your chilled crust and spread the cream cheese over it. Put in around 2 1/2 cups of strawberries over the cream cheese. Then pour over it the cooled, sugary, strawberry filling. Finally, top it with 1/2 a cup of your best berries.

Chill it for at least 2 hours. Feel free to serve it with ice cream or whipped cream. Enjoy!
